Rare Lamb Salad

Ingredients
  • 120g lamb back strap
  • 100g fresh asparagus
  • 2 small zucchini, cut into batons
  • 8 cherry tomatoes, halved
  • 100g salad mix
Method

Grill or barbecue lamb until just pink in the centre of meat. Cook asparagus then refresh in cold water, and cut in half. Slice lamb thinly. Mix all salad ingredients together with lamb. Then combine the following as a dressing and pour over.

Dressing:

  • ¼ cup fat free plain yoghurt
  • 1½ tablespoons tomato puree
  • ½ teaspoon Worcestershire sauce
