Asian Coleslaw


Ingredients
  • 1 cup chinese cabbage (wombok), finely shredded
  • 1 small carrot, grated
  • 1 cup bean sprouts
  • 1 green onion, finely sliced
  • ½ small green capsicum, finely sliced
  • Mix salad ingredients together.
  • ½ cup low fat plain yoghurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon seed mustard

Dressing:

  • 1 teaspoon finely grated ginger*
  • 1 tablespoon light soy sauce
Method

Combine dressing ingredients and toss through salad. Leave for 5 minutes before serving.

*Ginger is easy to grate if peeled and frozen first. Store a peeled knob in a sealed plastic bag in your freezer until needed.
