BBQ Mediterranean vegetables with fresh tomato, lemon & basil dressing
Ingredients
2 sticks rosemary,to brush BBQ
1 red capsicum, cut into batons
1 yellow capsicum, cut into batons
1 medium zucchini, cut into batons
1 bunch asparagus, trimmed and cut in half sea salt and freshly ground black pepper
1 tablespoon seeded mustard
½ lemon cut into segments
½ red onion, sliced thinly
2 ripe juicy roma tomatoes, roughly chopped
Method
Preheat BBQ to a medium-high heat. Brush BBQ with rosemary. Cook vegetables on BBQ until tender. Remove and place on a serving plate. In a large mixing bowl, combine mustard, salt and pepper, lemon segments, onion, tomato and basil. Stir to combine. Spoon over and serve.
